All my favorite ingredients. I love a meal in a bowl. Roasted beets & carrots topped with olive oil, Italian seasoning & a dash of maple syrup or balsamic vinegar has been the kitchen hit so far this month. I’ve also been enjoying roasted chicken sandwiches with refrigerator pickles. A version of shepherd’s pie (substituting chicken for minced meat) was served to the 3 helpers who hauled the 4 cords of wood we cut this past spring. There’s an end in sight to processing garden produce. Seven pints of pickled beets were put in the cold room this week with only salsa left to process as soon as the tomatoes ripen.

I can taste it, yum! I’d skip the chicken bit of course, but I honestly can’t see why it needs it. Loads of protein and flavour there already.

As we are looking towards cooler temps (one of these days, they assure us), soups and chilis move to the top of my culinary list. This sounds so yummy… and if I forget to thaw the chicken breast first, no problem!

Hi. Janis – You can definitely use a frozen chicken breast. Simply let it all cook on low for 5 hours instead of 4. 🙂

I first had a version of this soup on a work trip to El Salvador. My hosts asked me where I wanted to eat and I said I wanted to try Salvadorian food. They did admit that the origin is Mexican but this is what they really liked to eat. And it was good so I had no complaints! (Not that I would anyways).

Hi Donna, Your recipe looks great. We just had a big group of house guests including 5 children sleeping over…chaos plus fun. I likely could adapt this recipe, where it would be mostly add ins where the children could select their ingredients. (I see you have given some options in the above comments) I hope Richard is mending and all is going in the right direction. xo 💕 Erica

Hi, Erica – Thank you so much for dropping by. It is wonderful to hear from you. How fun to have a 5-children sleepover! I agree that this recipe can be adapted to be extremely child-friendly. And just like regular tacos, the topping choices for children to choose from can make it extra fun for them. Thanks for asking about Richard. His cast is now off so that he can begin physiotherapy. His recovery still has a long way to go but bit by bit he is getting bettter every day.

Thanks, Ally – There are two things that I changed. I added a bit of liquid and I shredded the chicken with two forks instead of a food processor – that would seriously be overkill! 😀
