  1. This sounds like a yummy recipe Donna and easy with so few ingredients. Thanks for sharing with us! Your linkup gave me the opportunity to go back through my memories of trekking in Nepal so thanks for that too 🙂

    1. Thanks, Debbie – Food is fabulous for evoking wonderful memories. Every time I have strawberry triffle ust like magic I am transported back to New Year’s Day when I was 12. It was the first time that I ever tasted that amazing dessert!

  2. All my favorite ingredients. I love a meal in a bowl. Roasted beets & carrots topped with olive oil, Italian seasoning & a dash of maple syrup or balsamic vinegar has been the kitchen hit so far this month. I’ve also been enjoying roasted chicken sandwiches with refrigerator pickles. A version of shepherd’s pie (substituting chicken for minced meat) was served to the 3 helpers who hauled the 4 cords of wood we cut this past spring. There’s an end in sight to processing garden produce. Seven pints of pickled beets were put in the cold room this week with only salsa left to process as soon as the tomatoes ripen.

  3. I first had a version of this soup on a work trip to El Salvador. My hosts asked me where I wanted to eat and I said I wanted to try Salvadorian food. They did admit that the origin is Mexican but this is what they really liked to eat. And it was good so I had no complaints! (Not that I would anyways).
    Awesome, Donna!

  4. Hi Donna, Your recipe looks great. We just had a big group of house guests including 5 children sleeping over…chaos plus fun. I likely could adapt this recipe, where it would be mostly add ins where the children could select their ingredients. (I see you have given some options in the above comments) I hope Richard is mending and all is going in the right direction. xo 💕 Erica

    1. Hi, Erica – Thank you so much for dropping by. It is wonderful to hear from you. How fun to have a 5-children sleepover! I agree that this recipe can be adapted to be extremely child-friendly. And just like regular tacos, the topping choices for children to choose from can make it extra fun for them. Thanks for asking about Richard. His cast is now off so that he can begin physiotherapy. His recovery still has a long way to go but bit by bit he is getting bettter every day.

  5. Mmm, I love chicken taco soup. This sounds perfect for fall. I’m in Scottsdale today and the temp got up to 104 yesterday. I’ll go home on Thursday for some soup weather. Thanks for sharing! Thanks also for your great comment on Janis’ story. She kept us all on the edge of our seats. 🙂
