What’s On Your Plate – The ‘Google Breakfast’ Edition.

When Google is not busy sending me endless lists of ‘top books’ of every kind, it inundates me with recipes it believes I should make. And before you say it — I don’t spend that much time scrolling. At least…I try not to (heavy sigh)! Anyway, last week Google pinged and shared this recipe reel. Quick √ Easy √ Healthy √ Basic Ingredients √ and Tasty (time would tell)!

I took the bait and decided to give it a try. I followed the recipe as shown, with the exception of using naan bread instead of tortilla and with the addition of grape tomatoes and diced red pepper. The results were as quick, easy, healthy and tasty as promised. If you prefer a step-by-step pictorial version instead of a video one, here’s what I did.

The final dish was even better than I hoped. Richard, who claims not to like quiche or omelettes, loved it and quickly helped himself to a second piece (shhh, don’t let him know that I told you this).
Oh, and the substitution of naan bread with the addition of tomatoes and red peppers worked very well (IMHO).

  2. Glad I’m not the only one! They arrive constantly and I give them a cursory glance. Often they contain cheese and my husband can’t tolerate it, but this one would work without. He doesn’t like quiche either. Heaven knows why because he likes eggs… and pastry. Go figure!

    1. Hi, Jo – I feel like we’re kindred spirits here. Richard likes eggs and pastry too – and he loved this dish – but definitely not quiche (or so he claims). The beauty of this recipe is that it is so flexible. You could totally swap in a different cheese or leave the cheese out completely. The possibilities are endless!

  3. I never wanted to make a mess in the kitchen, before going to work each weekday. So I drank fresh orange juice, put the glass into the dishwasher and left home straight away. The barista at work had a coffee ready for me, a double espresso exactly how I liked it 🙂

    Then a sandwich for lunch and a proper, cooked dinner with the beloved.

  4. Breakfast is one of my favorite meals. I like having brunch guests & this would be a good selection. Just had my favorite avocado & tomato on toast with mayo. The other go-to bkfts include boiled egg with salsa, toast w/ cheese & tomato or oatmeal porridge. There are often mini quiches in the freezer for reheating. I host house concerts & performers with food restrictions is becoming more common. The latest bio indicates a vegan preference, no meat or dairy but eggs are allowed! Vegan? I think they will be served my new favorite: peanut spinach soup.

    1. Mmmmm, avocado & tomato on toast. I just had breakfast and now I am hungry again. Thanks for including your other go-to breakfasts. They all sound great, Oh and I totally understand ‘vegan preference with no meat or dairy other than eggs.’ Although they would not be considered a true vegan, I get that it is generally a preference and the eggs are an easy source of essential proteins that are harder to get on a strict vegan diet. At least that would be my interpretation. <3

  5. Would be good with green onions as well. As someone else said, add a salad, and there is supper. Or a perfect brunch. I will just make it without help 🤫 because if The Engineer sees the cottage cheese

    1. Hi, Bernie – This dish can absolutely be breakfast, brunch, lunch or dinner. And you could swap out the cottage cheese for any other cheese (ricotta, feta, etc) or even leave the cheese out. It could be a fun recipe to experiment with.

  6. I would love that, but might substitute feta for cottage cheese. The beauty of the dish is that it’s so customizable. I could eat eggs every day! Yum.

    1. Hi, Lydia – The naan worked very well. I think the tortilla would work well too. I was surprised how quick and easy everything came out of the pan and held nicely together. That seldom happens for me! :D

  7. That looks delicious and easy – right up my ally. It makes me think of breakfast pizza. I can see all kinds of possibilities with it. 

    We have been traveling so I have not been cooking lately. While I love to eat out, after a month away, I am ready to cook my own food again. Thanks for sharing this recipe.

    1. Hi, Antoinette – Thanks for adding this. I think there are lots of ‘no cottage cheese please’ people out there. If it helps, I really couldn’t taste the cottage cheese myself. But I agree, this recipe is totally flexible to take it in any direction you like!

  10. Hi Donna – I have to say that looks delicious and I’m not even an egg or cottage cheese lady. I’ve never had cottage cheese in a recipe though – my mother used to plot a scoop on our plates…

    Keep those recipes coming – I really enjoy them!

  11. Donna, this looks delicious and I love your presentation of the recipe – so colourful and easy to follow! They should make all recipe books like this! I take it you will be cooking this again. Yesterday in Cambridge I was served a wonderful light lunch dish of a Chelsea bun cut into three slices, fried in egg and served with whipped cream and compote of berries – it was sublime and I will try to replicate at home! Wish me luck (reckon I’ll need it!)

  12. Hi Donna – thankfully it’s only me and today I just do whatever I feel like – the old days of entertaining are gone … I used to love it – and still enjoy buying and reading recipe books … especially refugee ones – they’ll pop up at some stage! I eat by the seasons … Cheers Hilary

  13. Hi, Hilary – Eating by the season, and preparing what you feel like that day, makes great sense. Richard and I eat plant-based as much as possible. We are both in sync with that – which makes meal prep so much easier!
